It’s National Pancake Day!
In light of pancake day, I thought it would be appropriate to post a recipe for “healthy” pancakes!
While bored at work, I designed a recipe for healthy pancakes that I am going to have for supper tonight.
1/4 cup whole wheat flour
1/4 cup protein powder
1/2 cup organic oats
1/2 cup almond milk
2 egg whites
1/2 tsp vanilla extract
1/2 tsp baking powder
1/2 mashed banana
1/2 cup blueberries
Dash of salt
1/4 tsp cinnamon (optional)
In a bowl whisk together flour, oats, protein powder and baking powder. In a separate bowl beat egg whites until fluffy, then add vanilla, milk and mashed banana. Pour wet mixture into dry and blend!
Yields 3 servings (2 pancakes/serv)
